ABOUT THE WINE
Dark garnet in hue, this Cabernet Sauvignon opens with pungent aromas and rich fruit. A complex layering of sage, white pepper and eucalyptus are anchored by morello cherry and plum. Elegant and refined, the flavors carry through the finish with soft tannins and low acidity that make the wine extremely versatile with food. To highlight the wine’s spiced notes, pair with herb-rubbed steak or grilled lamb with mint sauce.
Grapes were hand harvested in the cool hours of the morning for best fruit flavors. Controlled temperatures throughout fermentation retained the appealing bite of red fruit. Daily pump-over maintained good contact between the juice and skins for maximum extraction of flavor and color. An extended maceration time of fifteen days encouraged development of body and smooth finesse. To impart structure and spice, approximately 30 percent of the wine was aged in French oak casks for 12 months. An additional three months in bottle added balance and roundness.
ABOUT THE VINEYARDS
The grapes were sourced from Tunuyan, Tupungato, and La Consulta in the Uco Valley. Framed by the snow-capped Andes Mountains, the vineyards in this region are the highest in the area, sitting on rocky, well-drained soils, poor in organic matter – a positive for concentrated aromas and flavors. At this elevation, vines experience copious amounts of intense sunlight during the day balanced by cool nights, allowing development of rich color, soft tannins and floral fruitiness in the Cabernet Sauvignon.
