Winemaker Notes
We are a winery that has historically eschewed the bland pedestrian commercialized varieties like Cabernet Sauvignon and Chardonnay because of the popular, yet heavy headed winemaking style and the pretension that surrounds these wines ostentatious palates that they attract. So for us to induct said pedestrian wine into our House, we really needed to give him a thorough make over. Et voila, Cabernet Sauvignon redefined and transformed from a stodgy, vanilla and toasted brut, to a fine and upstanding citizen of the Big House.

Food Pairings
This inmate enjoys being paired with all sorts of comfort foods, like short ribs, filet mignon, lamb chops, spaghetti Bolognese or a dark chocolate torte.
